In 'Edit -> Preferences -> Other -> Experimental features',
select 'Advanced font customization'.
When selecting a font using the font browser,
you may now specify a distinct font for Mathematics, Greek, etc.
For more details, see "The Jolly Writer", section 3.8 (and first paragraph of
page 60).
