Don't know. Not a developer. :)
But using Insert Image places nothing into the eps include of the tex file.
What probably should happen is the included image gets dumped to a random
name within the same directory as the tex file and included correctly.
(Feature Request?)
I just messed with the image stuff (the insert -> image -> ... blah blah) and
the best solution seems to be ...
Create a new directory just for your file.
Create your images for output. Use .eps if you want postscript as your
target
document. Use .jpg, .png, or .pdf if you want pdf as your target document.
Save them in your documents directory.
Use Insert -> Image -> Link Image... to place the images into your document.
Export to LaTeX and edit the .tex file so the image includes are appropriate
for latex or pdflatex (drop extensions, add package stuff, etc.).
