My suggestion to work with firts year students is use Gnuplot+TeXmacs. ¿Why?.
Because, the gnuplot syntax is very easy and the graphics are insert
into document (in a TeXmacs session) automatically. For instance, the
previous command, using gnuplot is:

plot [-1:1] x**2;

which is very easy!!!.
