Combining foldable structures with lists is a bit tricky,
but can be done. This is an example of what I usually do
when making presentations:
<\itemize>
<unroll|<\shown>
<item>First item
</shown>|<\shown>
<item>Second item
</shown>>
</itemize>
Please be aware of the fact that foldable pieces of text
are not list items, so the behaviour is somewhat orthogonal.
If you want to have clickable/foldable list items,
then you should redefine the fold/unfold macros so as to
make them compatible with list structures (base them on
the "item" macro). Of course, this approach may yield problems
when using fold/unfold outside a list.
