by me it has no effect, it remains $<\infty>$; as in latex..

Keep in mid that you don't have to type the "<" and ">". The sequence of keys
is the following:

$\infty

press Return to see the infinity symbol.

well i dont want to make noise on the forum for thos question, maybe something is wrong in my configuration
but it does not work
with <> or without <>, with pressinf enter or not...

for me it is just a pb for my curiosity now
but i have access to the infinite symbol by taping either @ tab or @@, so i consider that my problem is solved

i wonder, thought, why this latex entry does not work on my texmacs...
