I know I can edit the .tm file with emacs, for example.  But 
then you have to worry about matching the < and >s.

What I'm asking has to do with the Document->View->Edit 
source approach. Is there a structured way to delete 
environments?  For example, in normal mode, pressing 
Ctl-backspace in the right spot deletes the enclosing 
environment.

In Texmacs 1.0.7.7 (at least the SVN version of a few days 
ago), under Help->Manual.
