Cells do not become text mode on my installation, I think you just have to create the table inside the math section, I use a "stack" for that.
In terms of shortcuts it would be :
$
[
Meta-t Shift-N s
done, and :
alt left/right/up/down to insert cells

So far I've only found this way: create big delimiters [ ] and then
inside insert an invisible table.
Problem is, each cell becomes text mode and I need to manually switch
each time to math mode.
Is there something I'm missing?
