hi i have found how to refer to an exercise or any other environment here :
http://mathematiques.ac-bordeaux.fr/profplus/docsci/tex/texmacs/tutoriel_texmacs.pdf

i type \label + enter in the exercise
then a name for example "toto"

then in the page i type "see exercise \reference" + enter
then the name "toto"
it's ok

something strange for me :

if, instead typing
/label+enter then "toto"
i type
\label|toto+enter
it does not work

why ?
