One way to do this is by editing your own 'my-init-buffer.scm',
following http://www.texmacs.org/tmweb/manual/webman-scheme.en.html
You can use
(init-env "font" "stix")
to get stix fonts and
(init-style "article")
to get article style.
"Menu" files (that is TeXmacs/progs/*/*-menu.scm) are helpfull to find
which scheme function should be used.
