I cannot reproduce your problem. If I select the Course style and then try to type a \shell-code block it shows up correctly using a monospace font, I’m on MacOS 13.1.

Have you done other modifications? (e.g. in your .TeXmacs)

You have to install these fonts (maybe find them somewhere on an old installation) or change the fonts in your slides. 

However it is quite strange that the font does not have underscore. Can you try to type in yourself some underscore with the same font to check if this is indeed the problem?
