I see a menu entry: Edit -> Preferences -> Printer -> Paper type...
but I'm not sure what to type here. I've tried "letter", "carta", "Carta", but nothing seems to work. When restarting texmacs, the default paper type still is "A4".
The available paper sizes are listed in Documento->Página->Tamaño

For sure. But you can definie you own too (with otra).

There's one behaviour I find uncomfortable: If you select "Document -> Preamble mode", and then deselect it, the document style is reverted to "None".
Strange, I don't get this behaviour if the style is defined forehand. Anyway, you can use Documento->Actualizar->Todo to retrieve the normal layout after deselecting Preamble mode.

Another one: Selecting text from another program and then pasting it to texmacs apparently eliminates carriage returns. This makes difficult to paste source code, for example, or any preformated text.
Same behaviour here, no matter which end line breaking I use.

Finally, why isn't possible to resize the "load file" window?.
Because it is not coded to do so. Maybe you can add this to the wish feature. It's rather boring to click 10 times on .. to go to the right folder, I agree with you.
