There's no central place documenting all of them.

The symbols are declared in /usr/share/TeXmacs/fonts (might be in a
different location in your system) in the "enc" and "virtual"
subdirectories.

You can also find some useful tables in
/usr/share/TeXmacs/langs/encoding, in particular
symbol-unicode-math.scm, symbol-unicode-oneway.scm,
tmuniversaltounicode.scm. Those tables included all texmacs symbols
when I wrote them in 2003. I do not know if they have been kept up to
date.
