Hi Vincent,
Your other document is of 'tmdoc' type, the command \key is defined in the tmdoc style file.
Move the cursor to the top-left position, and the change document type from Article to Documentation > Texmacs > tmdoc using the left-most drop-down menu.

we have a document (the old 2012 cookbook that we are working on) where we often use the tag \key and it works well
we have an other document where \key seems not to be recognized
this one :

we dont understand why \key does not work on this document...
