Thanks Henri and Karl, after a bit of investigating, it turns out my Ubuntu install is somehow not working. I installed Texmacs on my Windows setup and copy paste works out of the box. So to install Texmacs on my Ubuntu 17.10 machine I did the following
1. Download http://www.texmacs.org/Download/ftp/tmftp/generic/TeXmacs-1.99.6-B.tar.gz
2. Extract content in /opt
3. export paths and everything. Run $texmacs
Everything runs, I can type and everything but cut, copy and paste don't work. What I have noticed is when I fire up Texmacs on my windows and hover my mouse over the cut/copy icons, I can also see the hotkeys Ctrl+X/Ctrl+C. But in Ubuntu hovering over the same icons shows std+X/std+V. Could this be part of the problem?

It will depend on what "look and feel" you choose in Edit, Preferences...

For the Emacs look and feel, set the mark with C-Space, use arrows to extend the selection, cut with C-w, and paste with C-y.
