Try Document -> page -> type -> paper.

I am not sure to understand the question, but you may be inspired by
some source code from the existing styles (elsart.ts, etc.) and
copy/paste it into your preamble.

You can select a portion of the document and make Format -> number of
columns -> 2.

Afaik you have to redefine the render-big-table macro, and inverse the
first and the last row of the « container » table.

Yes. See section 5.7 of the user manual (Books and multifile documents).
