You can use the TeXmacs "drawing tool" to draw the lines.
Then put textboxes with or without tables included to type the text.
You can also put images ...
One tricky point : vertical text is not possible in TeXmacs (AFAIK)
I typed the text in TeXmacs, and rotated/croped the resulting image in
Gimp.
