Another option I use on the Mac is to just ignore Apple's "Terminal"
application entirely and start an xterm in X (one typically starts
automatically when you start the X server). The xterm mill have the
DISPLAY set properly, and you can just type "texmacs" or whatever you
want.
The problem that many not-so-experienced users have with xterm is that
apart from DISPLAY, the rest of the environment that you get by default
in xterm is very rudimentary. So if you type "texmacs", you will
normally get "command not found", and when you type the whole path
"/sw/bin/texmacs", texmacs will start, but not find its helper
applications. There are of course remedies for this, but all of them are
more complicated than setting DISPLAY in Terminal.app or using 'open-x11'.
