You do not need a global table, I think you can just made every single entry its own small table or a markup with two arguments and then a macro which format correctly the markup. This would take care of the page breaking and allow you to process differently and automatically both sides, for example you can redefine the macro to show only the left or right side.

Btw: I would be interested in having such a french/german math dictionary! I really need it for my lectures. Can you share it when it is ready? :)
